Cheesecake with strawberries

Ingredients:

  • 100g oat flakes
  • 130g ground walnuts
  • 130g ground almonds
  • 15pcs. tuyeres (pre-soaked for 2-3 hours in water)
  • 250g mascarpone
  • 500g sour cream
  • 250g yoghurt
  • 1 piece. vanilla
  • 3-4 tablespoons agave
  • 300g fresh strawberries for decoration

Method:

First I cleaned and soaked the tuyeres in water for about 2-3 hours, and afterwards I ground the walnuts and almonds. Finally, I mashed the tuyeres and mixed them with the ground nuts and oat bran. The result was a fairly thick and crumbly mixture, which I spread in a suitable low pan while pressing hard with my fingers. I left the base in the fridge and started with the cream.

The cream is super easy to prepare. I used a mixer to mix the mascarpone, sour cream and yogurt along with the vanilla and agave syrup. The result was a heavy cream that I spread with a silicone spatula on the previously prepared nut base.

I decorated with the fresh strawberries. And Voilà! The result is a very light and easy dessert that will not ruin our summer bodies!
